- 2 tbsp vegan butter (I used Vitalite)
- 3 tbsp brown sugar
- 3/4 cup sugar
- 1 1/2 cup plain flour
- 3 tbsp baking powder
- 2 tbsp cinnamon
- 1 tbsp cocoa powder
- 1 cup milk alternative (I used Oat Milk)
- 2 tbsp lemon juice
- 1/3 cup oil
- 1 tsp vanilla extract
- 3 tbsp butter
- 6 tbsp icing sugar
- Cocoa Powder
You can just throw all the dry ingredients in a bowl and then slowly add the wet ingredients and blend together. Easy Peasy.
This recipe makes approximately 12 cupcakes (depending on how much mixture you eat).
Make sure you use reusable cupcake cases or recyclable ones! I got mine from Poundland and they’re perfect.
Cook at 180 degrees for 15-20 mins.
The frosting can be dyed if you want (for Christmas Day I plan to use red colouring) or in this instance, I just added more cocoa powder.
